This recipe was really good and saved me from going to Noodles and Co. for dinner. It's hard being hopelessly low on cash at ALL times! This is a badly lit photo...It tasted and looked a lot better than what this picture presents!
1/2 package whole wheat sweet potato gnocchi (or gnocchi of your choice)
2 tomatoes
1/2 cup onion
2 garlic cloves
2 Tbs. olive oil
1/4 c. milk
1/4 tsp. nutmeg
2 Tbs. whole wheat flour
1/2 Tbs. Butter or butter substitute
2 portabella mushrooms cut into chunks
Freshly ground pepper
Mrs. dash
Salt substitute
Cook gnocchi according to directions (place in boiling water with salt, when gnocchi rises to top of water take out) pour 1/2 Tbs. olive oil over gnocchi and set aside.
Boil Tomatoes 4-5 min. take out and cut into med. size chunks.
heat up remaining olive oil and add onions and garlic over med heat until onions are translucent. Add chopped tomatoes AND mushrooms to onions and garlic let simmer for 2-3 min.
Whisk milk, flour, nutmeg and melted butter until combined. Add to Tomato and mushrooms. Add freshly ground pepper, salt substitute, oregano, basil, and Mrs. Dash Table-Salt (what I live by!) to simmering sauce.
Add Gnocchi and allow sauce to thicken (4 min.) Top with freshly grated parmesan cheese and dried basil/oregano. ENJOY!!!
