Kayla's Cous Cous with veggies and Thai Peanut Sauce

1/3 Cup Plain Cous Cous
1 Cup mixed vegetables (fresh or frozen) Brocolli, Cauliflower, Zuchinni, Eggplant, Carrots, Mushrooms
2-4 Tbs. Thai Peanut Sauce (Organic Bangkok brand-most grocery stores)
oregano, parsley
Salt and pepper
organic extra virgin olive oil

1.Make Cous Cous according to directions.
2.Warm up olive oil in skillet and saute vegetables with oregano, parsley, salt and pepper until crisp but cooked through.
3.Fluff cous cous and add vegetables to cous cous.
4.Add Thai Peanut Sauce, and addition pepper to top.
Spicy and warm on a cold evening!
