Vegan Pumpkin Muffins

Ingredients:

1 3/4 C. flour
1 1/4 C. sugar
1 Tbs. baking powder
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. allspice
1/4 tsp. nutmeg
1/8 tsp. ground cloves
1 can pumpkin puree (fresh or from can)
1 Tbs. soy yogurt
1/2 C. soymilk
1/2 C. vegetable oil
2 Tbs. molasses

1. Preheat oven to 400 degrees.

2. Grease muffin tins with spray on oil or vegetable shortening

3. Sift together dry ingredients (flour through cloves)

4. In large bowl whisk together wet ingredients (pumpkin through molasses)

5. pour wet into dry and combine.

6. Fill muffin tins 2/3 of the way full

7. Bake 15-20 min.

calories: 493 (per Jumbo muffin), 293 (per regular muffin)
