Homemade Black Bean Cakes

2 15 Oz. cans Black Beans (Rinsed and drained)
1 tsp. extra virgin olive oil
1/2 an onion chopped
5 cloves garlic minced
3 tsp lemon juice
3 tsp. chili powder
3 tsp. cumin
1/4 tsp. garlic powder
1/2 tsp. soy sauce
salt and pepper to taste
1 slice wheat bread (torn into chunks)
1/2 tsp. dried oregano
1/4 cup feta cheese or blue cheese crumbles

In a skillet heat olive oil on Med. heat. Add minced garlic and onions. Allow to saute until onions are translucent. Add black beans, onions, garlic and all additional ingredients into the food processor and process until combined.
Heat oven to 400 degrees.
On a cookie sheet, spray with cooking spray. Separate the mixture into eight equal patties. Allow to cook on one side for 15 minutes. Flip over patties and bake for another 10 min. Remove from oven and serve with salsa, plain yogurt and/or sour cream. Can also sprinkle with chives and additional cheese if desired.
