Carrot Minis!

These Carrot Cake minis are derived from the funky cake recipe below. Just bake for 15 min. checking often at 325 degrees, in a well greased and floured mini muffin pan (Or in mini muffin tins). They are the perfect size dessert, and oh sooo yummy!! Healthy too really, you get a good serving of veggies, some pecans if you choose, a little carb pick me up and some dairy with the cream cheese!!! WHo could ask for more?
