Chewy n' Spicy Gingerbread Cookies

MMmmm...Gingerbread Cookies....one of my many sweet tooth weaknesses!! Most especially when they are warm and chewy with a cold glass of milk. YUM

So I think I made a slight decision on my future. No culinary school in Chicago for starters....WAY TOO EXPENSIVE!! I cannot spend the rest of my life paying off debt that I should not have to have in order to be successful.


I was accepted to Madison for Baking and Pastry...YEAH....but it's a two year wait list...NO!! At first this was horrible...but now I am excited about this idea. I think, as of right now, I am going to go to LA for two years and try out my acting skills/film work, maybe do some mission work, travel, discover poverty in the real world and THEN in two years move back to Madison to go to baking and pastry school, maybe get married....?? Settle down....but still be my crazy self on the side..:) I guess only God knows where I am going to go after school. No really, ONLY God knows..because I have NO IDEA where I will be tomorrow morning!

Chewy Molasses Cookies

Ingredients:

4 1/2 Cups All-purpose flour
4 tsp. ground ginger
2 tsp. baking soda
1 1/2 tsp ground cinnamon
1 tsp ground cloves
1/2 tsp. ground white pepper (trust me it is delicious!)
1/4 tsp. salt
1 1/2 Cups Butter
2 Cups sugar
2 eggs
1/2 Cup molasses

Directions:

1. In medium bowl, sift together four, ginger, baking soda, cinnamon, cloves, ground pepper, and slat; set aside. In a large bowl beat butter with electric mixer on low speed for 30 seconds. Add the 2 cups sugar. Beat until combined. Beat in as much of the flour mixture as you can with the mixer. stir in remaining flour. 

2. shape dough into 1-inch balls, roll in sugar and place on cookie sheet. Bake at 350 degrees for 8 minutes checking often, or until bottoms are lightly browned and tops are puffed (Do not overbake). Cool on cookie sheet 2 minutes. Transfer to wire rack and cool. 

ENJOY WARM AND CHEWY, the slight spice from the ground white pepper really gives this gingerbread cookie a spicy twist on an old classic.

  2. This sounds like a wonderful idea!!! I hope to be in Madison this summer...so anytime you want to get together then I'm yours! :) We most certainly have to eat and drink...it will only improve our blogging skills!
